Ingredients
Blueberry Roll Dough
- 242.70g of flour
- 76.72g of coconut oil
- 133.3g of water
- 2.52g of sea salt
- 35.72g of brown sugar
- 5.04g of yeast
- 2.02g of baking powder
Blueberry Roll Filling
- 175.23g of blueberries in light syrup
- 0.69g of allspice
- 51g of sugar
- 3.30g of lemon juice concentrate
- 5.25g of pectin
- 0.54g of ground ginger
- 35.70g of IQF blueberries
- 28.14g of dried blueberries
- 0.15g ground cinnamon
Vegan Orange Icing
- 171g of vegan butter
- 111.75g of powdered sugar
- 9.70g of orange zest
- 299.95g of orange juice
Instructions
Procedure: including prep, cooking, assembly, finishing
- Form 250g of dough into a ball
- Roll out into a rectangle, about .5″ thick
- Facing the wider part of the rectangle, apply all filling in a thin layer
- Roll the dough up to form a tight rollade
- Slice the rollade into 6 even pieces, wrap tightly in plastic wrap to form a cylinder
- When completely frozen, remove plastic wrap
- Using a knife to separate the rolls at the cuts, place rolls on a
- parchment lined sheet tray evenly spaced
- Bake at 400F for 20-25 minutes
Blueberry Roll Dough
- Place water and yeast in the bottom of the mixing bowl
- Pour dry ingredients on liquid
- Mix at medium speed with the dough hook for approximately 10 minutes. When the dough is sufficiently kneaded, the dough will begin to climb the hook
- Let dough rise in the bowl for an hour at room temperature
- Punch down dough, roll into a ball, and chill
Blueberry Roll Filling
- Place all ingredients in the pan other than pectin
- Bring ingredients to a simmer and cook for 30 minutes
- Whisk in pectin, continue cooking for another 20 minutes
- Place cooked fruit in hotel pan and cool completely in refrigerator.
Notes : Allow filling to cool completely before assembling rolls
Vegan Orange Icing
- Whip vegan butter with the paddle until it is light and fluffy
- Add all other ingredients and whip until fully incorporated
