Blueberry Serrano Lime Butter
- 452g of unsalted butter
- 27.5g of freeze-dried blueberries, roughly chopped
- 9.5g of blueberry powder
- 3g of lime zest, fresh, lightly packed
- 6g of serrano pepper, stemmed, seeded, fine brunoise
- 1g of crushed red chili pepper
- 3g of garlic granules
- 6g of Kosher salt
Instructions
Blueberry Serrano Lime Butter
- In a food processor, mix all ingredients together until well combined.
- Transfer compound butter to a sheet of parchment paper. Roll paper around butter to form a log.
- Store covered butter roll chilled below 41°F until ready to use.
