Blueberry Ginger Fruit Rollup
- 1000g of blueberries, IQF
- 200g of apple sauce
- 28g of ginger puree, fresh
- 94g of lemon juice, fresh
- 72g of honey
- 2g of black pepper, ground
- 2.20g of citric/asorbic blend
Instructions
Blueberry Ginger Fruit Rollup
- Process all ingredients in VitamIx or similar until smooth
- Pass processed puree through single mesh strainer
- Place aprox 1.25 cups puree on parchment lined dehydrator tray ( used Excaliber)and spread aprox 1/4″ thick
- Dehydrate at 125 degrees for 6 or more as needed hours-leathery and pliable but not hard
- Store between parchment paper or use parchment paper to roll into long strips.
